Have you ever had a stuffed sweet potato before? They’re amazing, right?
A delicious sweet potato stuffed with everything that’s right in the world – avocado, cheese, chicken sausage, green onion, sour cream (or greek yogurt), spinach… the list could go on for days.
There’s only one flaw with a stuffed sweet potato. They’re SO GOOD that you just want to eat the whole darn thing. At least that’s my problem and I very well may be the only person who struggles with portion control when eating something like a stuffed sweet potato. If i’m not though, you will LOVE this fun recipe.
I have all the steps below on how to make this recipe, so enjoy this video format of sharing the instructions!

This is the fun part, so don’t skimp on the toppings!
Now, I don’t have kids of my own, but I think these would be so fun to make with kids. If you set out all the toppings and let them create their own little nachos. I could be totally wrong and these would turn into a complete disaster, but someone out there with little kiddos needs to try this out and send me a picture, please!
