Ok, here’s the secret. It’s to pre-portion out snacks. Yup. Seriously. It’s that simple.

Even if it’s something that you don’t make yourself, abiding by the serving size and documenting the snack in some type of food or calorie tracker will keep you accountable more than anything else. Why, you may be wondering? Because these are the ‘extra’ calories that tend to not get stored in your mental database of ‘What I Ate Today.’ Calories that are outside your meals are important fuel, but keeping track of them will help you to better (and more quickly) achieve your goals!

So I’ve worked up a great snack that is designed to be pre-portioned out! It’s these Vanilla, Lemon, Blueberry Fat Bites.  This is a low carb, higher fat and protein snack you can pre-make and enjoy all week long! This recipe is perfect for those following the keto or paleo diets or if you are gluten free or vegan.

I stored these in a Ball jar to keep them air tight and as fresh as possible. Depending on your macro nutrient goals for the day, you can enjoy 1 of these bad boys as a satiating and nutrient afternoon or mid-morning snack. However, you’ll want to eat them all because THEY TASTE SO GOOD.

The ingredients I selected for this recipe were meant to add healthy fats, protein and no processed carbs.

It’s important to note that if you don’t prefer to roll yours in coconut, you certainly don’t have to, but for some reason I get grossed out by any protein ball recipe where they are perfectly smooth. Anyone else feel that way?

I N G R E D I E N T S //
 12 Medjool Pitted Dates
 ½ cup Raw Unsalted Almond Butter
 3 tbsp Coconut Oil
 2 Scoops of Vanilla Protein Powder (I used Vega Vanilla Protein Powder)
 1 Whole Lemon (zested)
 1 tsp Pure Vanilla Extract
 ½ cup Fresh Blueberries
 ½ cup Water
 1 cup Bob's Red Mill Unsweetened Shredded Coconut

The first thing you'll need to do is soak your dates in hot tap water for about 20 minutes. This will soften them up and allow you to blend them together easier.

PRO TIP: go ahead and buy the pitted dates. Save yourself the time of taking out those dang pits.

Once your dates are done soaking, add them into your food processor with the raw almond butter. I used the chop function primarily to mix up the dates and almond butter. Consistency should be crumbly.

Next you will add in your protein powder, coconut oil and vanilla. Blend together until the 'dough' starts to blend together. This is where your 1/2 cup of water will come in handy. Add it in as needed to blend up all the ingredients into dough-like consistency.

Next, add in all your lemon zest, blueberries and half the cup of shredded coconut and blend together. Add in a little bit of water as needed to get all the ingredients mixed together. Then pop this into the fridge for 10 minutes before forming into the bites.

Final step is to line a baking sheet with parchment paper. Then sprinkle the rest of the shredded coconut flakes on the baking sheet. Then, use a spoon to create balls from the dough and then roll them lightly in the shredded coconut flakes.
