RECIPE | The EASIEST Italian Zucchini Boats with Ground Turkey

You get off work late. You had THE BUSIEST day and the last thing you want to do is cook. But you’re trying to stay on track and all you want is a warm meal. So what’s a gal to do?

You whip up a batch of these Italian Zucchini Boats with Ground Turkey and PAT YOURSELF ON THE BACK sistah.

Not only are these super easy to make, but most likely you have all the ingredients handy, and you may only need to swing by the store for some zucchinis. Then you’ve got yourself an easy, warm cooked meal in about 45 minutes.

Yields5 Servings

I N G R E D I E N T S //
 5 Medium Sized Zucchinis
 2 tbsp EVOO
 ½ tsp Garlic Salt
 2 tbsp Minced Garlic
 ½ White Onion, chopped
 ½ Green Bell Pepper, chopped
 1 lb Ground Turkey
 1 ½ cups Organic Spaghetti Sauce (I used Dave's Gourmet Roasted Garlic & Sweet Basil from Sprouts)
 1 tbsp Primal Palate Amore Italian Seasoning (or any other Italian seasoning blend you have on hand)
 ½ cup Low Fat Shredded Mozzarella Cheese

Pre-heat your oven to 400 degrees.

While your oven heats up, you can prep your zucchinis.
-Wash them all off.
-Slice them all in half length wise.
-Use an apple peeler to peel of layer of skin on the bottom of each zucchini. This way they will sit up right for you and not spill out all the delicious Italian turkey filling you will be putting in them!

Last step to prep your zucchinis is to hollow them out a little bit to make room for all the delicious filling about to go inside. (I carefully cut just a little out of the middle of each zucchini before I roasted them in the oven. You can see what they looked like in the photo.)
Then you can drizzle the boats with 1 Tbls. of EVOO and season with the garlic salt before popping them in the oven for 20 min.

In a large skillet, add in the other Tbls. of EVOO and the minced garlic, white onion and green bell pepper. Cook together about 5-7 minutes over medium heat until everything is tender and the onions are starting to get brown on the edges.

Now add in your ground turkey and Tbls. of Amore Primal Palate Seasoning. Cook all together over medium heat until the ground turkey is fully cooked. Then you'll add in the spaghetti sauce to cook over low-medium heat for about 10 minutes.
NOTE: While you don't have to use the Dave's Gourmet Spaghetti sauce, I do recommend finding a sauce that is chunkier and not as thin of a sauce. This will make it so your boats don't get flooded (yeah, that can happen. This isn't just a fun and highly coincidental reference)

Once everything is done soaking up the delicious flavors and is properly cooked, you're ready to start stuffing your boats by carefully spooning in your meat mixture into each zucchini boat. Then you'll sprinkle a little mozzarella over the top and pop these back in the oven for 15 minutes.
