I love a good customizable dinner. Everyone can “doctor up” as my mom would always say, their plate however they want! It makes it fun for everyone AND makes it less stressful if you’ve got a lot of picky eaters.
But, that’s not the only reason why you will love this fun twist on the classic stuffed sweet potato. It’s just plan delicious and very easy to make.
Prep time is about 30 minutes from start to finish. So if you have all the ingredients handy, you can easily make these any night of the week.
Lastly, I love these because they help me stay more portion controlled. A stuffed sweet potato is a large meal that I most of the time cannot resist eating the entire thing (hey, I guess I like my own cooking). But with these nests, you can easily up your protein to carb ratio so you don’t blow your macros for the whole day! #winning

Preheat your oven to 400 degrees.
Wash your sweet potatoes and prep them in the spiralizer. I used the medium blade for my Kitchen Aide spiralizer attachment.
Next, you'll toss your spiralized sweet potato noodles with 2 tbls. melted butter, 2 eggs and the 1/4 cup of shredded cheese. I just add it all together in a bowl and toss together until everything is thoroughly coating the noodles. Then season with 2 tsp. of salt and add as much pepper as you would like to season.
Now you will need to form your nests on a baking sheet lined with parchment paper. If you don't have parchment paper, I would suggest just forming them straight onto the cookie sheet. I tried it with foil and they all stuck a bit to the foil.
I scooped out about a cup of the noodles and blopped them on the sheet. Then I just gently arranged them so there would be a little area in the middle where the stuffing/toppings could go!
Once they are all formed, pop them in the oven for 30 minutes on the middle rack.
*keep an eye on them though. The edges can get a little dark, so you may need to remove them a couple minutes prior 30 minutes being up.
Once your nests are baking, you can make your stuffing! Cook your ground turkey together with the onion, garlic and roasted red pepper flakes. Then once your nests are done baking, you can add some meat to the middle of each nest. Sprinkle with a little cheese (if you want) and pop back in the oven for 2-3 minutes so the cheese melts.
Once you have them all "stuffed" with your meat, then you're ready to add whatever toppings you and your family prefer! We always love cheese, avocado, cherry tomatoes and fresh cilantro!
