I have a love affair with Tex-Mex. Anyone else?
It’s my absolute favorite food genre and I could eat it any day of the week.
So when I was thinking about how to enjoy some delicious tacos, but with a Cook It Healthier twist, is it weird that lasagna came to mind? I’m sure you’re thinking to yourself, Ashley, how does lasagna go with tacos and how IN THE HELL does that make it healthier?
Well, let me just explain that I’m always looking for ways to portion control myself and so I thought that a lasagna could be a great way to portion control my taco intake. Ok, hear me out on this… this lasagna is baked in a 9′ x 13″ glass baking dish and it’s got all the delicious ingredients a good taco needs. So when you cut it into a square, it is less tempting to over-eat (well, until you taste how good this is, then that’s just another ball game all together). With tacos, I tend to not think one measly taco is enough. So I get two, and then go back for one more. But with this lasagna, I fill up more on protein per serving. You following me on this now?
Anyways, let’s discuss this Skinny Taco Lasagna. It’s got layers of black refried beans, Siete Chickpea Flour tortillas, ground turkey taco meat and some cottage cheese. Mmmmm….
It’s ooey and gooey just like lasagna should be, but it tastes just like a soft shell taco. Oh yeah, baby.
The best part? This is really pretty simple to put together. The hardest part is just layering all the ingredients before you bake it all together. So what are you waiting for? Grab these ingredients and get to cooking!
Oh, and you know what this recipe goes REALLY, REALLY, REALLY well with? My recipe for The Best Damn Spanish (cauliflower) Rice.
Pre-heat oven to 375 degrees.
In a medium skillet, add in a little olive oil and your chopped onion. Saute until the onion is tender and fragrant. 4-5 minutes. Then add in your ground turkey and stir until completely cooked through. Add in your taco seasoning packet to the meat, only. (Don't add any additional water or oil) Then add in your drained diced tomatoes and combine everything together until mixed up evenly. Then set aside to layer into your lasagna.
In a separate bowl, spoon in your refried black beans from the cans. Place them in the microwave for 1-2 minutes until warm. This helps when you layer them into the lasagna.
In another bowl, you will want to thaw out the frozen Trader Joe's Fire Roasted corn. I don't get mine all the way warm, but just defrost it slightly.
Grease a 9" x 13" glass baking dish.
To build your lasagna, follow these steps:
Spread a layer of refried beans on the bottom of the dish. (Make it thin, but not thin enough you see the bottom)
Layer of tortillas (you will have to tear these in half to make sure to evenly cover the square dish)
Layer of meat (sprinkle about half your meat)
Layer of cottage cheese (Make it a thin layer, but not thin enough you see the meat underneath)
Layer of corn (sprinkle about 1.5 cups of corn)
Layer of shredded cheese (sprinkle about 1/3 of your cheese on this layer)
Repeat one more time.
Once you finish, top the final layer of shredded cheese with another layer of tortillas. Then sprinkle the remaining 1/3 of your cheese over top.
Bake at 375 degrees for 40 minutes until nice and bubbly.
TIP: I put a baking sheet under my lasagna because it started to bubble over slightly and drip.
