Another comfort food recipe coming to the blog…what do ya know?!
I think this must be a part of my nesting phase or something. I’m craving all these recipes from my childhood randomly. They ARE some of the best recipes and they remind me of home, so I figured they would be great to share with you all too!
With the Healthy Tuna Noodle Casserole from last week and now this recipe, my mom is getting a BIG shout out here on cookithealthier.com lately! And rightfully so.
Meatloaf is one of those dishes that you tend to forget about if your mom isn’t making it for you, but it’s really so good AND EASY! So why not make it more often? Especially with all the amazing ingredients in this recipe, you can’t feel guilty serving it up a few times a month.
Since the traditional meatloaf is made with ground beef and white bread, I wanted to switch things up a bit and make this version using lean ground turkey and some of my favorite Dave’s Killer Bread! Oh, and the most important ingredient of all… Tessemae’s Ketchup! Now, the small tweaks to a very traditional meatloaf recipe that I made are just that.. minor. But I think they make a big impact when it comes to the nutrients you’re getting. So you will enjoy a familiar meatloaf flavor with less processed junk! A win-win if you ask me.
Hope you enjoy this meal. I paired it with some whipped cauliflower and some roasted brussel sprouts. PERFECTION! Although, my husband was not a fan of the whipped cauliflower. He thought I was tricking him with mashed potatoes haha.
Here’s what you will need to make this recipe:
Pre-heat your oven to 350 degrees and grease a glass loaf dish.
In a large mixing bowl, combine the ground turkey with the bread. Be sure to finely crumble up all the bread into little chunks.
Next, add in the eggs, spices and water. Combine everything together thoroughly and then add the Worcestshire sauce and half the ketchup. Mix everything together until completely combined.
Now you will put the meat mixture into your greased loaf pan. Smooth it all into the pan and then put the remaining ketchup on the top (smooth it on like it's frosting).
Bake at 350 degrees, uncovered for 60 minutes.
Serving Size One 1/2 inch thick slice
