If you’re looking for a yummy treat that fits into your keto lifestyle or just want a dessert that’s not going to overdo it on the sugar, then these bars are for you!
Baking is hard to do. You have to get the ingredients just right and any little change can totally alter the outcome. Well, this is one of those recipes that I learned a lesson about the difference between baking with coconut flour vs. almond flour.

So if you have not tried using coconut flour yet, then you should be aware that it has a tendency to be extra dry when it’s featured in baking. A lot of times you will need additional liquid (like eggs or almond milk) to make sure there is enough moisture. On the other hand, it doesn’t rise as well as other flours, so baking soda and apple cider vinegar can be used to help solve that issue. Check out this article for more on this topic!
Well I hope you guys enjoy this recipe. Here are all the things you will need:
Pre-heat your oven to 350 degrees and line a baking pan (with edges) with parchment paper.
Combine the coconut flour and baking soda in a separate bowl - set aside.
In a mixing bowl or your stand mixer bowl, combine the banana, sugars, vanilla, butter, coconut oil and cacao powder until thoroughly combined. Then you add in the eggs gradually until combined.
Now you will gradually add in the flour/baking soda mix. I usually add in about half and turn my stand mixer on a 2-3 to combine together. Then add in the other half of the flour mix, as well as the almond milk. Stir everything together until combined. If the mix is too dry, add in another half cup of almond milk. The correct texture will be similar to play dough.
Last step is to add in your Justin's Peanut or Almond butter, as well as the dark chocolate chips. This just needs to be roughly combined.
Now you will put your dough onto your baking pan and mash it down until it's evenly pressed down into your baking pan. Then bake for 20 minutes.
Once it's done baking, allow it to cool for at least an hour before smoothing over the melted dark chocolate.
(Pro-Tip: melt the dark chocolate in the microwave in 30 second increments. Heat it for 30 seconds, take it out and stir, then place it in again for another 30 seconds. Repeat until it's melted)
Then you will smooth it all over the top of the bars and place in the fridge to harden. Then you can cut into bars and ENJOY!
