There’s just something about chips and salsa that get me excited. Am I the only one? No.. can’t be. You know you sit down at a Mexican food restaurant and immediately crane your head around in order to make eye contact with the chips and salsa guy coming your way.

Imagine if someone were walking towards you with a hundred dollar bill in hand and acting like they were handing it to you, no strings attached. Yeah, that’s the feeling I get when the chips and salsa guy comes towards me at a Mexican food restaurant. #priorities

Now, don’t get me wrong, I have almost NEVER found a salsa that I didn’t like, but there is something special about a homemade version. You can taste the fresh ingredients and it just pops in your mouth with flavor. All hail fresh veggies!

When you dip your chip in for the first bite, it’s magical. Right?

Well I decided to give this salsa recipe a permanent home here on Cook It Healthier because it really is a healthy snack, plus, my husband really only gives me the ‘super impressed’ reaction with my best recipes. So I knew this one was a winner when he tried it and LOVED IT! Plus, he is from San Antonio and knows a thing or two about Mexican food. He said it reminded him of a salsa from one of his favorite restaurants from back home.

So are you ready to make this super simple salsa (say that 4 times fast)?

Here’s what you will need for this recipe:

Yields1 Serving

I N G R E D I E N T S //
 2 medium red tomatoes
 1 fresh jalapeno (remove seeds to reduce heat)
 1 green bell pepper, cleaned and cut into small chunks
 2 limes, juiced
 ½ red onion, cut into chunks
 2 large garlic cloves
 1.50 tsp garlic salt
 1 tsp onion powder

Since all your veggies will go into a food processor or blender, there is no need to spend a ton of time chopping them up tiny. Just wash, peel and cut them enough to fit into whatever blending device you plan to use.

Toss in all the veggies and seasonings to your food processor and chop, chop, chop until everything has been cut up and the consistency looks like the photo! Then you're ready to enjoy!

*this will last in your fridge for up to a week!
