RECIPE: Spicy Asian Crunch Cabbage Salad

Summer is here (well, almost) and that means salads, fresh produce and the best seasonal veggies!

When it comes to salads I tend to get in a rut and need to remember to get out of my normal, lettuce-tomato-cucumber-onion salad comfort zone. There are so many amazing flavors out there you can mix and match, but I totally know what you’re thinking right now…”I just never know what else to do with salads and they get BORING!”

Well allow me to introduce to you this Spicy Asian Crunch Cabbage Salad. It’s super easy to toss all together and is the perfect base for any type of protein you have on hand or it’s good all by itself too.

Just look at all that color! So yummy and so very crunchy!

I made the base of this salad with cabbage, which is PACKED with nutrients. I honestly didn’t know how healthy it is for you until I did a little research and found out that it is:

  • High in Vitamin C
  • High in Folate (hey, hey all you pregnant ladies out there! This salad is for you!)
  • Reduces Inflammation
  • Rich in Fiber

Who knew cabbage was so awesome, right? Not to mention all the other great ingredients added on top of the cabbage, needless to say that this salad is definitely healthier for you than some of your average “boring” salads!

Alright, here’s everything you need to whip up this yummy Asian Crunch Cabbage Salad:

I N G R E D I E N T S //
For the salad:
 1 head savoy cabbage, chopped
 1 cup shredded carrots
 1 cup chopped celery
 ½ cup chopped green onion
 ½ cup fresh, chopped cilantro
 1 cup chopped almonds or walnuts
 1 cup shelled edamame, thawed and salted
 1 cup crunchy asian noodles
For the dressing:
 ¼ cup avocado oil
 ¼ cup soy sauce or coconut aminos for a soy free option
 2 tbsp sesame oil
 1 tbsp fresh minced ginger
 2 tbsp pure, organic maple syrup or honey
 1 tbsp minced garlic
 2 tbsp Sriracha sauce
 1 lime, juiced

In a large bowl, toss in your chopped cabbage. Then add in all the other veggie toppings.

In a separate, smaller bowl, combine all the ingredients for the dressing. Whisk together until everything is combined! Then you will dump half of it on the salad. Begin to toss it all together with tongs. Then go ahead and add the second half of the dressing and continue tossing all together! This salad is DELICIOUS topped with sliced avocado, baked chicken, salmon or shrimp. The possibilities are endless.
