Well y’all, it’s been a while since I was able to whip up a new recipe and actually post it for you! Who knew a baby was so distracting! (queue smirks from all you experienced moms…)
That being said, my whole world has changed as far as timing out my life. Between working from home part time and also caring for our sweet little four-month-old now, the time I can dedicate to actually cooking has drastically decreased. Which, can actually be a great thing because it forces you to rethink and reduce the complexity of recipes.
Honestly, most of the feedback I have received in the last two years of developing recipes for you guys has been that there’s just not a lot of time to cook. Translation… “make your recipes simpler and quicker to make, Ash!” Ok, ok… I hear you and 100% get it now that I also have basically no time to even grocery shop like I used to, let alone prep a meal for 45 minutes before even letting it touch the stove.
In walks my newest recipe that I’ve dug up from my recipe book archives. I used to be OBSESSED with this recipe because it was delicious, so easy to make I could remember it off the top of my head and only requires 4 ingredients. Now, you really can’t beat a recipe like that can you?
Yup. That’s it. Just these 4 ingredients pictures above. Now, before you think to yourself that stuffing isn’t healthy, let me remind you that the rest of the ingredients are lean, low in fat and calories. So just a little whole wheat stuffing won’t kill ya!
Traditional Bruschetta includes grilled bread that has been rubbed with olive oil and seasoned with salt all while being adorned by beautifully fresh tomatoes, herbs and sometimes beans, cheese or cured meat.

In addition to the very few ingredients in this recipe, there are also just 4 steps in making this dish. Preheating your oven doesn’t count as a step!
The first is to cut your skinless, boneless chicken into cubes and then season with olive oil, Italian seasoning and a little bit of salt. Once it’s mixed together, you’ll layer it into a greased 9’x9′ glass baking dish.
Next, combine the stuffing, tomatoes and water together until everything is moist. Then you will top the layer of chicken with the stuffing mix and smooth until it’s in an even layer.
Ok, not that you’ve got your two layers in your baking dish, then it’s time to sprinkle the top with some mozzarella cheese and pop it into the oven to bake for 30 minutes.
You’ll bake this uncovered on 400 degrees for 30 minutes until the top is bubbly and the chicken on the bottom is nice and white! Once it’s done cooking, remove from the oven and allow to cool for 5 minutes before cutting into pieces! It will help you get square servings out easier if you let it cool just a bit!

Finally, sprinkle on the mozzarella cheese over the top, pop in the oven and bake uncovered for 30 minutes until bubbly and some of the cheese has browned. Then remove from the oven and let it cool before cutting into square serving sizes!
