One of my absolute FAVORITE healthy dips has to be my black bean & corn salsa. Full of fresh flavors and a variety of textures, this dip is always a crowd pleasure.

When you think of healthy appetizers, does your mind kind of go blank if you take cheese or dairy out of the equation? Yeah, me too. But, there’s still great options out there for those of us who are looking to bring something to a party but don’t want our “healthy appetizer” to end up on the corner by the weird tofu thing that one chick brought that nobody has met before.

This dip is easy to make and honestly just tastes better the longer it marinates all together, so making it ahead of time is perfect.

Now, this is called a salsa and you would be absolutely correct thinking that it is best enjoyed with some chips. If you’re doing Weight Watchers with me, then you count yourself out 12 tortilla chips (this is usually a serving and = 4 points or so) and then track 0 points for a 1/2 cup serving of the salsa.

Another trick is to slice up some cucumbers and use those as your “chips” and then you really have a full 0 point appetizer on your hands! What’s not to love?

Best of all, you don’t have to be the one always bringing “the healthy snacks” and instead, you can be the one always bringing the delicious snacks that go first! Yes, yes, I get competitive about food and this may not even be a thought that crosses your mind at parties or when you’re bringing food somewhere, but i’m always in an Iron Chef competition in my mind even if i’m just going over to my friends house to watch The Bachelor on a Monday night. Gottta bring something worth while or more importantly…worth the points!

I N G R E D I E N T S //
 black beans
 corn
 1 cup loose cilantro leaves
 4 fresh limes, juiced
 16 oz cherry tomatoes
 1 jalapeno, with seeds removed
 ½ a large red onion
 1 tsp garlic powder
 2 tsp Trader Joe's Chile Lime Seasoning
 3 tsp garlic salt

In a food processor, toss in all the cherry tomatoes, red onion, jalapeno, cilantro and lime juice. Use the chop function untill everything is chopped nice and fine, but be careful to not overdo it so that it turns into liquid.

First, drain the black beans and rinse them off. I just run water in the can, drain and repeat several times so they don't turn the salsa runny and black. Then in a large mixing bowl, combine the black beans, corn and your pico de gallo with all the spices.

Stir everything together and do a little taste test to make sure you like the amount of salt and citrus. Add more to your liking and then refrigerate until you're ready to serve! This dip is served cold with warm tortilla chips or cucumber slices!
