RECIPE | The Easiest Buffalo Chicken Cauliflower Crust Pizza

Buffalo Chicken.. there’s just something about buffalo sauce and chicken. Throw some ranch into the mix and you’ve got something magical! Am I right or am I right?

I will almost NEVER turn down a buffalo wing, a buffalo chicken salad or basically anything that includes buffalo sauce.

Lucky for me (and anyone else who is trying to follow Weight Watchers), Frank’s Hot Sauce is 0 points, so I decided I had to make a recipe using it on some chicken and what better recipe than a pizza?

Of course, this recipe is using cauliflower crust (Trader Joe’s is my favorite) and beyond that, there are just 6 other ingredients- cheese, buffalo sauce (duh), red onion, green onion and Tessemaes ranch dressing. So easy, right?

Honestly, there are a million ways to make this recipe more complicated, but I thought, “why mess with what I came up with that’s so incredibly easy to make in a matter of minute”?

If you’re one of my fellow weight watcher followers, then you’ll be happy to know that if you cut this pizza into 6 slices, each piece is just 6 points. Pair it with a hearty salad and you’ve got a delicious and filling meal. Honestly, you will feel satisfied.

Let’s Talk Cauliflower Crusts

For this pizza, I used the Caulipower Cauliflower crust. You can find these crusts in the freezer section by the other frozen pizzas in a lot of grocery stores. Normally, I would use the Trader Joe’s Cauliflower crust (you can read why here), but I made the critical mistake of going to Trader Joe’s late on a Sunday afternoon and they were already sold out… I bet they are rushing to make one of my other cauliflower crust pizzas. Don’t you think? Yeah, probably. Gotta give the people what they want.

The Caulipower Cauliflower crust probably would more closely resemble actual crust- if we were to compare it to the Trader Joe’s Cauliflower Crust. It is a bit crunchier and holds a pizza crust-like shape pretty well. If you use either one for this recipe, the weight watchers points come out to be about the same per crust. Another slight difference is that the Trader Joe’s crust is a tad larger than the Caulipower version. It’s a minor difference. You probably wouldn’t be able to tell unless you’re a weirdo like me and use the crusts ALL.THE.TIME.

I N G R E D I E N T S //
 1 Caulipower Pizza Crust
 1 lb Skinless Chicken Tenders
 ½ cup Frank's Buffalo Sauce
 3 tbsp Tessemaes Ranch Dressing
 1 cup Part-Skim Mozzarella Cheese
  cup Red onion, thinly sliced
 3 tbsp Green onion, chopped

Pre-heat your oven to 425 degrees. While the oven is heating up, get the skinless chicken tenders ready to bake!

Place all the chicken tenders in a baking dish, pour in 1/3 cup buffalo sauce. Make sure each tender is thoroughly coated in the buffalo sauce and then cover the dish with foil. Once the oven is heated, pop them in the oven for 20 minutes to bake.

While your chicken bakes, slice up the red onions (cutting the slices in half to make them easier to spread around the pizza) and green onions, measure out the cheese and set all of them aside.

Next, you'll need to pre-bake your cauliflower crust. Depending on which one you have, here's what you need to do to pre-heat:
-For the Caulipower Crust: place on your pizza stone and pop in the oven with the chicken for 5 minutes. It crisps up quick, so 5 minutes should do the trick.
-For the Trader Joe's Cauliflower Crust: this crust requires more pre-baking. You will place this crust on your pizza stone and bake on one side for 10 minutes. Remove and flip the crust carefully, then bake for another 10 minutes.

Once the chicken is done baking, remove and cut it up into tiny pieces. I usually slice each tender down the middle lengthwise and then cut across to get tiny chunks. Once it's all cut up, place in a separate bowl and toss with another tablespoon or two of the buffalo sauce.

NOTE: You will just use 2 cups of the cubed buffalo baked chicken, so you can save a couple tenders aside for a salad later in the week!

Once all the ingredients are ready, sliced and cooked, it's time to assemble the pizza.

First, layer on the ranch dressing directly onto the crust and smooth around like a pizza sauce. (leave a little room around the edges though!) Then, sprinkle on just a little of the mozzarella cheese, followed by the red onion slices, then the chicken.

Finally, sprinkle on the remaining mozzarella cheese all over the pizza. Sprinkle on the green onions to the top and then pop the whole thing into the oven for 20 minutes. NOTE: if you are using the Trader Joe's Cauliflower crust, you may need to keep it in there for an additional 5 minutes to bake.

Once the pizza is done baking, the edges are crisp and the cheese is bubbly, remove it from the oven and drizzle on a little extra layer of buffalo sauce and then slice up and enjoy!
