Easy & flavorful is the name of the game with this recipe.
If you took the time to read my very riveting post about the Chimichurri Sauce that goes on this fish, then you know that my recent obsession has been to find easy ways to add a big dose of FLAVOR to get me out of my ‘white meat’ rut.
Chicken and fish can get boring. Plain and simple. Especially when you’re trying to watch your points with Weight Watchers or if you’re cooking it healthier by baking or grilling, then the flavor can become a little lack luster after a few meals. But your problems are solved with this recipe!
The other great part about this recipe is that it’s possibly the easiest thing you can make, yet it will taste like you worked on it for hours!

The most time you’ll spend on this recipe is making the chimichurri sauce first (and that only takes 10 min).
Then you’ll line a baking sheet with parchment paper, lay your Tilapia filets down, spoon on the chimichurri sauce and then pop in the oven to bake for 20 min! While it bakes, do yourself a flavor and make this Parmesan Cauliflower Rissoto and your dinner will be AH-Mazing.

Pre-heat your oven to 375 degrees and line a baking sheet with parchment paper.
As long as your tilapia filets are thawed, you can go ahead and lay them on the parchment paper lined baking sheet.
NOTE: I got 1lb of Tilapia and it equaled 3 large filets. I did not cut them in half, instead, left them whole to retain all the juices.
Spoon on about 2 Tbls. of the chimichurri sauce onto each filet and rub it into the fish. Feel free to spoon on more so the whole filet can get nice and covered in sauce. Then pop them in the oven for 20 minutes and if they come out white and flakey, then the filets are done!
