Baked Cinnamon Applesauce (no sugar added)

 4 lbs peeled apples ( I used honeycrisp, but any sweet red apple should be great)
 1 tbsp ground cinnamon
 2 tbsp coconut oil

Pre-heat your oven to 350 degrees. Line two large baking sheets with parchment paper.

Peel and core all the apples. Then slice each apple into 8 - 10 slices. Toss the slices into a large bowl. Once all the apples are sliced, place half of them into a gallon bag. Toss in 1 Tbsp coconut oil and 1/2 a Tbsp cinnamon. Seal up the bag and toss together until all the slices are well coated with the cinnamon. Then you will spread the slices into one layer onto one of your parchment paper lined baking sheets. Repeat for the second half of the apple slices.

Pop the two baking sheets with all your apple slices into the oven on the middle rack. Bake for 30 - 35 minutes. Once they are fork tender, they are ready to come out!

Finally, toss in all the baked cinnamon apple slices into a food processor or vitamix, blend until smooth.
*NOTE: this recipe lends to a thicker, less watery applesauce. If you want a bit more juice, you can add quarter cups of no sugar added apple juice to the blended applesauce until it reaches your desired texture.
