Cinnamon-Sugar Apples in a Blanket

 16 oz organic apple slices
 2 puff pastry sheets
 ¼ cup Monkfruit sugar
 3 tbsp almond flour
 1 tsp cinnamon
 2 tsp 100% pure maple syrup
 ¼ tsp salt
 2 tbsp Vital Farms Unsalted Butter, melted
 1 tbsp fresh lemon juice
 1 egg

Set out your puff pastry sheets in your fridge to thaw according to package instructions.

Pre-heat your oven to 375 degrees.

In a big mixing bowl, add in the apples, sugar, almond flour, cinnamon, syrup, salt, melted butter and lemon juice. Combine everything together until all the ingredients form a sugar-cinnamon coating on the apples. It won't all stick on the apples, but you can grab a little of the "batter" and stick it in the blanket when you roll up the apple.

Next, take out your puff pastry and lay them out flat on a cutting board. I cut each puff pastry into 10 lengthwise strips. Then I cut each strip in half and stretched it to be longer to fully wrap each apple slice. Then brush on some egg wash on each strip to help them stick better! And since I used the pre-sliced apples from Trader Joe's, I only used half of the second puff pastry to make a total of 30.

Pro Tip: I cut each strip in half and then stretched them to be a little more thin and so they wrapped fully around each apple. Otherwise the puff pastry would take over the individual apple slice.

Now you're ready to roll up each apple slice in a strip of puff pastry. I also stuck in a little extra cinnamon-sugar mix into some of the wraps. Stick one end of the puff pastry strip on the end of the apple and then just roll it up! Then you will brush on some egg wash over the top of each apple and sprinkle more cinnamon on top!

Once you have all your apples wrapped up, pop them in the oven for 20 - 25 minutes. You will know they are done when the puff pastry is nice and golden brown!
