Pre-heat your oven to 400 degrees and grease a 9X9 glass baking dish.
Take your chicken, cut it into small cubes and add it to a mixing bowl. Once all the chicken is cut up, drizzle with the olive oil and season with the salt and Italian seasoning. Mix together until the chicken cubes are all coated with the seasonings. Then you'll layer the cubes on the bottom of your baking dish.
Next, in a medium-sized mixing bowl, combine the stuffing mix, diced tomatoes and water. Mix together until everything is moist. Then dump the stuffing mix in an even layer over the top of your layer of chicken.
Finally, sprinkle on the mozzarella cheese over the top, pop in the oven and bake uncovered for 30 minutes until bubbly and some of the cheese has browned. Then remove from the oven and let it cool before cutting into square serving sizes!
