Over a mixing bowl, grate a medium-small sweet potato with the skin on.
Once your potato is all grated, add in all the seasonings, cheese and egg. Mix together until all combined.
Now, you will want to turn your waffle maker on to high heat or second to highest heat setting. My waffle maker has numbers and I set it at a 5 heat level. Allow it to heat up all the way before adding your sweet potato mix.
With a spoon, add in the sweet potato mix to your hot waffle maker. I was able to fill 3 of the waffle triangles with the sweet potato batter. Make sure the sweet potato batter fits into all the nooks and crannies of each triangle. Then I would spray the top of your waffle maker with some non-stick olive oil spray to help prevent sticking. Then you'll gently lower down the top of the waffle maker onto the batter. Don't press it down! Just set it down on top and you'll see why. There will be a little overflow, but don't worry, that's normal!
Allow the sweet potato batter to cook in the waffle maker for about 7 minutes and check it to see if it looks completely crispy on the outside. If you are able to lift the waffle out with a butter knife, then it is done. If it still looks a little flimsy, then let it cook another 30 seconds to a minute. Then carefully remove from the waffle maker, make your sandwich and ENJOY!
