RECIPE | Pumpkin Spice Fall Fat Bites

 12 Medjool Pitted Dates
 ½ cup Raw Almond Butter
 ¼ cup Organic Maple Syrup
 3 tbsp Unrefined Coconut Oil
 3 tbsp Chia Seeds
 ¼ cup Water
 1 tbsp Trader Joe's Pumpkin Pie Spice Seasoning
 1 tbsp Cinnamon
 ¼ cup Bob's Red Mill Shredded Coconut (Optional)
 2 Scoops Vanilla Protein Powder (Optional for extra protein)

Just like the Vanilla, Lemon, Blueberry Fat Bites recipe, the first thing you'll need to do is soak your dates in hot water for about 20 minutes. This will soften them up and allow you to blend them together easier.

Once your dates are properly softened, add them into your food processor along with the raw almond butter. Blend these two ingredients together until smooth.

Then you will add in all your dry ingredients- protein powder, spices, chia seeds. Start your processor to mix all of the dry ingredients in together and gradually add in the water, maple syrup and coconut oil.

Once everything is blended together, I like to pop my food processor 'bowl' into the fridge for about 10 minutes. This helps me form the bites easier.

The final step is to roll up your bites.
Line a baking sheet with parchment paper and use a spoon to scoop about a golf ball size of the dough to form into a bite.
I made half of them coated in shredded coconut and the other half without. They both are delicious, but the bites with no coconut taste more like pumpkin spice vs. the coconut coated bites have a more dominate coconut taste.

Once all your bites are rolled up, place your baking sheet in the fridge for at least 4 hours before moving your bites. They hold their shape best when they are cold!
