RECIPE | Roasted Chile Lime Chickpea Salad

 1 can of chickpeas, drained
 2 tbsp Avocado Oil (I used Chosen Foods Brand)
 3 tbsp Trader Joe's Chile Lime Seasoning
 ½ tbsp Garlic Salt
 2 tbsp Primal Kitchen Chipotle Lime Avocado Oil Mayo
 ½ a whole lime, juiced
 ½ a green bell pepper, diced
 ¼ cup chopped white onion

Pre-heat your oven at 400 degrees.

Once you've drained your chickpeas, toss them in a gallon plastic bag with all the avocado oil, garlic salt and 2 out of the 3 tbls. of Trader Joe's Chile Lime seasoning. Toss around until each chickpea is red and thoroughly coated in the oil and seasonings! This may take a few shakes, a few gentle rolls on the counter and a few more shakes.

Next, line a baking sheet with foil (for easy cleanup) and dump out your coated chickpeas. Make sure they are in one layer on the pan to allow them to cook up crispy! Just before you pop them in the oven, sprinkle over the top your remaining 1 tbls. of Trader Joe's Chile Lime seasoning.

Now you can place your baking sheet with chickpeas in the oven for 20 minutes. After 20 minutes, take them out of the oven and stir up gently so all sides of the chickpeas get the most crisp.

While your chickpeas are roasting, chop up your bell pepper and onion and toss in a bowl big enough to mix everything together once your chickpeas are done. Then add in your 2 tbls. of Primal Kitchen Chipotle Lime mayo and mix with the bell pepper and onion.

Once your chickpeas are done roasting, go ahead and add them straight into your bowl with the pepper/onion/mayo mixture. Toss all together and ENJOY!!
