Pre-heat your oven at 350 degrees.
Mix up the Simple Mills dough according to package instructions, then place it in the fridge for about 10 minutes while you chop up the other ingredients.
Cook your chicken sausage, drain and place in a bowl to be ready to spoon into the cups.
*NOTE: for one box of Simple Mills dough mix, you will likely need about half the package of sausage, but you can cook up the whole package if you decide to double the recipe!
While the chicken sausage cooks, chop up whatever veggies you want to place in the cups. I chopped up about 8 mini peppers and some onion. About a quarter cup of each is all you will need.
After chilling the dough for 10 minutes, get it out of the fridge. You should be able to divide up the dough into 12 - 15 little balls. Then you will want to grease a regular muffin pan with oil, place one of the dough balls in each of the muffin cups and press it into form the cup. (PRO TIP: this dough puffs up, so the thinner you can get the dough pressed into the muffin tin cup sides, the better)
(For photo purposes, I placed mine on a cookie sheet just so I could snap a picture for y'all to reference)
Once all your cups are pressed into the muffin tin, pop them in the oven to bake for 4 - 5 minutes before putting in the toppings.
Once you have them back out of the oven, you're ready to load in the toppings. I did a layer of the spicy soppressata, some pizza sauce, half a mini cheese ball, veggies, sausage and topped with a halved mini mozzarella ball.
(PRO TIP: I sliced the mini mozzarella balls in half so they would stay in place better.)
Then you will bake for 12 - 15 minutes or until the cheese is bubbly and the crust is crispy!
