First step of this process is to lay out your meal-kit storage containers.
-Gallon bag for the chicken + seasonings
-Small snack bag or container for seasonings
-Mason jar or tuberware for the beans
-Mason jars (you will need two to hold all the liquid) or tuberware for the liquids
Place your chicken breast in a gallon bag & toss in all the seasonings needed for the chicken. Seal up the bag and work the seasonings around to coat the chicken.
PRO-TIP: Cut your chicken breasts in half so the chicken shreds into smaller pieces in the chili when its done!
Measure out the rest of your seasonings and place all together in a snack bag so you can easily sprinkle them in when you're ready to toss everything in the crock-pot.
Open the cans of beans, rinse and put in a container with the green chilis. You don't need to worry about mixing them up or anything. This is just for convenience purposes!
Add the chopped onion, chicken bone broth & frozen corn to a container. Seal it up and you're all set!
Place everything in the fridge until you're ready to toss into the crockpot. I would make it within a week of prepping all these ingredients so the chicken is fresh.
To Cook:
-Place the chicken breast in the crock-pot first by laying flat on the bottom
-Dump in the beans & chilis
-Add in the seasonings mix
-Dump in the broth, corn, onion mix
-stir a little so the seasonings mix up with the liquids and cook on low for 8-10 hours
Finally, after cooking for 8-10 hours, with a large fork, break up the chicken in the chili. It should fall apart very easily for you.
Then you will stir in the half 'n half and let it sit for another 20 minutes before serving!
PRO-TIP: for extra creamy deliciousness (but not as "skinny" of a version of this chili) add in a half block of cream cheese with the half 'n half and let it melt before serving.
